Oak Savanna was originally planted in the ‘70s and is the highest elevation vineyard in the Santa Ynez Valley. It is located on Foxen Canyon Road just outside of the town of Los Olivos and features very rocky soils, primarily composed of shale. The site’s position high above the Valley provides ample sunshine and beautiful views of the Los Padres wilderness.
We made this Pét-Nat according to the "méthode ancestrale"—the world's oldest technique for making sparkling wine. Under this method, we allowed the wine to undergo a native ferment and then bottled it while still undergoing primary fermentation. This allows us to capture CO2 in the bottle. After six months on the less, we disgorged the wine by hand and finished with corks and cages. Finally, we hand-labeled each bottle.
