Valdiguié (aka 'Napa Gamay'), is somewhat of a California heritage grape that was planted in the 90s at Shell Creek. It ripens at low alcohols and produces large berries and clusters.
We ferment this wine using carbonic maceration—leaving the whole clusters undisturbed for a full 10 days—resulting in a bright, light, and juicy wine, best enjoyed with a slight chill.
