The Old Oak Vineyard is part of the Paso Robles Willow Creek District and features 21 acres of organic, dry-farmed grapes of 11 different varieties. The vineyard sits above 1300 feet, and features heavily calcareous soils.
Vaccarèse is one of the rarest grapes in Chateauneuf-du-Pape, with just over 10 acres planted there. As far as we know, this is one of two vineyards in North America that grows this grape. We are thrilled to have an opportunity to explore and express this rare and unique variety.
The Vaccarèse was harvested by hand on October 4, 2021. and spent 14 days on the skins with 50% whole cluster inclusion, and underwent a native yeast fermentation. After fermentation, the wine was basket pressed and aged in neutral French oak barrels for 6 months before bottling without fining or filtration in April 2022.
Our 2021 Old Oak Vaccarèse has rustic characteristics reminiscent of Mondeuse ... think violets, candied red fruit, pencil lead, and spice, all underscored by a vein of lively tannin.
