2021 was our second vintage working with Chenin Blanc and the Cat Canyon Vineyard, located just outside of the small town of Los Alamos. These vines were planted on their own roots in 1978. The vineyard has sandy loam soils and also benefits from ocean-influenced weather patterns.
These grapes were destemmed and received 24 hours of skin contact before pressing and being racked to neutral French oak barrels where the juice carried out a native fermentation. The wine was aged on the lees for 7 months before being bottled without fining or filtration.
The 2021 Cat Canyon Chenin Blanc oozes with mango, passion fruit, wool, and subtle notes of honey on both the nose and the palate. The 24 hrs of skin contact adds a unique textural component to the wine that is characteristic of the varietal.
